Granola - A Foodopolis Short

Crunchy, tasty, healthy, nutty. Like your favourite auntie.

This is ultra-adaptable. Put in whatever floats your boat - just remember to leave out the dried fruit for the second oven session.

 

INGREDIENTS

sesame oil

vanilla essence

honey - or maple syrup, or golden syrup, or agave - something sweet and sticky (steady...)

the next bits are your choice: I'm just putting in what I used

rolled oats

macadamia nuts

walnuts

flaked almonds

pumpkin seeds

sunflower seeds

ground ginger

cinnamon

desiccated coconut

raisins, or sultanas, or dates, or dried apricots - you get the idea

METHOD

  • Preheat the oven to 130ºC

  • In a bowl...

  • A good glug of sesame oil

  • A tsp or so of vanilla essence

  • A good helping of honey (or syrup)

  • Mix it all together to make a smooth gloop

  • A goodly amount of rolled oats

  • Add your nuts and seeds, ginger and cinnamon (and anything else you fancy - but not the dried fruit)

  • Mix it all thoroughly and plop to onto baking paper on an ovenproof tray - one layer thick

  • Pop it in the oven for 15 minutes

  • Take it out and add a good covering of desiccated coconut and dried fruit

  • Mix all that together

  • Return it to the oven for another 15 minutes (10 might do, but I like it toasted)

  • Let it cool for 10 minutes

  • Scrape it out onto another tray and break it up

  • Leave that to cool until it is totally cold

  • It'll keep in an airtight container for about a month or more
